Greek Grilled Cheese:

A few simple ingredients put together to make two separate and very different meals. With tomatoes, cheese, chicken and onions, you can make two meals when you want something quick and easy.

Ingredients you’ll need:

  • 1 ½ teaspoons of butter, softened

  • 2 slices of whole wheat bread

  • 2 tablespoons of crumbled feta cheese

  • 2 slices of Cheddar cheese

  • 1 tablespoon of chopped red onion

  • ¼ of tomato, thinly sliced

 

Directions:

  1. Heat a pan over medium heat.

  2. Butter one side of each piece of bread.

  3. Layer the cheddar cheese, feta cheese, red onion and tomato on the non-buttered side.

  4. Place the other slice on top, with the buttered sides out.

  5. Place the sandwich in the pan and fry until golden brown. Fry each side for about two minutes (second side cooks faster).

Tomato Baked Chicken:

A good combination of chicken and tomato, paired with the added flavor of balsamic vinaigrette dressing to make a new yet flavorful taste.

 

Ingredients you will need:

  • 1 small red onion, thinly sliced

  • 4 small boneless skinless chicken breasts

  • 1 can of diced tomatoes, drained

  • ¼ cup Lite Balsamic Vinaigrette Dressing

  • ¼ tsp (teaspoon) garlic powder

  • ¼ cup Grated Parmesan Cheese

 

Directions:

  1. Pre-heat the oven to 220 degrees.

  2. Spread onions on the bottom of a 32.5 x 23-centimeter baking pan that has already been sprayed with cooking spray. Then top with chicken.

  3. Combine the tomatoes, dressing and garlic powder. Pour over the chicken.

  4. Sprinkle the cheese over the combination. Turn heat down to 74 degrees and bake for 30 minutes or until chicken is done.

 

Then serve with or without a side dish of your choice.

Easy Chicken Alfredo:

  • Servings: 4-6

Ingredients

  • Chicken Breasts (Boneless)

  • 200g - Pasta (Fettucine or Penne)

  • ½ cup to ¾ cup - Parmesan or White Cheddar Cheese

  • ¾ cup – Full Cream

  • 3 to 4 tablespoons – Olive Oil

  • ¼ cup – butter

  • Salt

  • Pepper

 

Method

  1. Boil up enough water for your Fettucine or Penne noodles and cook the pasta until el dente. Drain but do not rinse.

  2. In a fry pan, heat olive oil and start cooking the chicken breasts.

  3. Add the salt and pepper.

  4. Cook the chicken until it is done. Turn the chicken down to a low heat, or just turn it off. Try and keep the chicken as warm as possible.

  5. In a saucepan, add butter on medium heat until melted.

  6. Add full cream and parmesan cheese.

  7. Once this is done, mix your chicken pieces into the sauce and mix together well in the saucepan.

  8. Mix warm pasta to chicken and sauce mixture.

 

Chef's Tip:

Add diced grilled bacon or ham for alternatives.
